Basil is an herb that is commonly found in Taiwan and is widely used in various types of Taiwanese cooking such as sautéing, boiling, stir-frying, and deep-frying. The herb used is a variety of basil, but its flavour is stronger than the sweet basil that is used in making pesto sauce. Paired with crunchy nuts roasted at low temperatures, it will add layers of flavour to the food no matter whether it is used as a dipping sauce, a sauce for rice or pasta, or even as seasoning. It is an essential all-purpose sauce for the kitchen.

Basil is known as the “nine-level pagoda” in Taiwan. This is because when basil blooms, its many flower clusters are stacked on top of each other like a tower, while the number nine signifies abundance in Mandarin. In Taiwan, the most commonly consumed variety of basil is thyrsiflora, which has reddish-purple stems. Because of its strong flavour, only a small amount is needed to remove meat odours and enhance their fragrance. It puts the finishing touch on a dish and plays a crucial supporting role in popular cuisine.
